A' Recipe for Cookies

INGREDIENTS

• 1000 gr. NOUVELLE Mix
• 500 gr. Soft Flour from MARRAS MILLS
• 700 gr. Soft Margarine
or
• 500 gr. Soft Margarine
• 200 gr. Butter

PREPARATION METHOD

Knead all the ingredients together at the 2nd speed with the whisk until a uniform mass is formed. Shape into a roll, roll it in coarse sugar, truffle, or another preferred ingredient, and cut into 1cm thickness. Bake at 180°C in a conventional oven and 170°C in a convection oven for about 15-20 minutes, depending on the size of the Cookies.

B' Recipe for Cookies

INGREDIENTS

• 1000 gr. NOUVELLE Mix
• 500 gr. Soft Flour from MARRAS MILLS
• 560 gr. Glucose or Invert Sugar
• 670 gr. Soft Margarine
• 150 gr. Water

PREPARATION METHOD

Knead all the ingredients together at the 2nd speed with the whisk until it becomes fluffy, approximately 5-6 minutes. Optionally, add chocolate chips, almonds, or other preferred ingredients according to the type of cookies you want to make. Cut with a pastry bag or by hand. Bake at 220-230°C in a conventional oven and 190-200°C in a convection oven for about 10-12 minutes.
