CHOCOLATE CAKE INGREDIENTS
• 1000 gr. CHOCO GUSTO Mix
• 300 gr. Eggs
• 320 gr. Sunflower Oil
• 260 gr. Water
CHOCOLATE CAKE PREPARATION METHOD
Place eggs, sunflower oil, water, and finally the CHOCO GUSTO mix in the mixer's bowl.
Beat the ingredients with the whisk at the 2nd speed for 4 minutes.
Fill molds or baking trays halfway and bake at 170-180°C for 30-40 minutes, depending on the size of the mold.
After baking and before the chocolate cake cools, cut it into pieces and cover it with ganache, warmed to 50-55°C.
GANACHE INGREDIENTS
• 620 gr. Cream 35%
• 620 gr. Couverture Chocolate
• 980 gr. Syrup 26-27° density (460 gr. water, 420 gr. sugar, 100 gr. glucose)
GANACHE PREPARATION METHOD
Heat the cream until it boils.
Remove from heat and add the couverture chocolate.
Mix gradually adding the syrup until the mixture homogenizes.
