Tsoureki Bread

INGREDIENTS

• 4000 gr. TSOUREKI Mix
• 270 gr. Flour 70% Strong No1 MARRAS MILLS
• 400-420 gr. Yeast
• 1250 gr. Water

PREPARATION METHOD

Knead all the ingredients together at the 2nd speed of the mixer for about 15 minutes until the dough detaches from the walls of the bowl and is soft and elastic.
Dough temperature should be 30°C to 33°C.
Cut into the desired weight, round it, and let it rest for 20 minutes covered.
Flatten (shape) it into a pita, place it in the pan, and let it rise for about 45 minutes at a temperature of 35-40°C and humidity of 65-70%.
Baking temperature is 150-155°C.
After baking, brush the surface with a mixture of honey and water using a brush, and then sprinkle with powdered sugar.
